At Brickstead Dairy in Greenleaf, Wis., the focus is on tomorrow as much as it is on today. Gene Brick and his son Dan, fourth- and fifth-generation farmers, take seriously their roles as caretakers of the precious natural resources so important to all of us. Driving by, you might see a weed-covered field. Dan sees a cover crop he planted to protect the soil and surrounding streams and rivers. Those crops build healthy soil, keep it from eroding, hold phosphorous and other nutrients in place and help the soil more effectively hold water for the main crops like corn that is fed to the cows. The Bricks are a shining example of Wisconsin dairy farmers’ commitment to producing safe, nutritious food in a sustainable way.
